It has a gentle yet slightly citrus nuanced aroma, and the taste is soft and moderately acidic, spreading throughout your mouth. The aftertaste is refreshing and light. While the acidity stands out, the umami is intentionally reserved, giving it a sharp impression.
For pairing, we recommend pairing it with fatty and flavorful seafood. The acidity of sake neutralizes the fat of tuna as you drink. And if you pair it with oysters, the acidity will accentuate the flavor of the oysters.
About the Sake
"Soutenden" was originally created 20 years ago with the aim of creating a delicious sake with a refreshing taste reminiscent of the blue sky and sea of Kesennuma, where the brewery is located, as well as the seafood landed at the local port. It is a sake that stepped into the concept of pairing (with seafood) and marriage, which was not yet established in Japan at the time.
We use Miyagi Prefecture's own sake rice "Kura no Hana", which our company president was also involved in development, and we have realized a clean & light taste that takes advantage of its characteristic low protein = less umami.
This sake is extremely popular, especially outside of Japan, and won first place in the sake category at the “Feminalise World Wine Competition,” which was held last year and was judged by female wine professionals. In addition, this sake has been highly evaluated in multiple competitions every year, such as the platinum award at the Kura Master held in Paris.
