About the Sake
For this Tokubetsu Junmai, we use Iwate Prefecture's original sake brewing rice "Gin Otome" from Ninohe City. This "Gin Otome" has been cultivated by a team of farmers led by Mr. Ryoichi Itsukaichi from Kintaichi, Ninohe City since the days of experimental cultivation.
We also conducted test brewing at our company, and the rice was certified as an original shuzo-kotekimai (Sake Brewing Rice) in Iwate Prefecture.
Nanbu Bijin Tokubetsu Junmai is made by Ninohe’s Nanbu Toji (master brewer) in Ninohe's sake brewery using Ninohe's rice & pure water of Ninohe's Orizume Basenkyo.
Proudly, this is the ultimate “Terroir” Sake.
